Grilled Pineapple with Toasted Coconut and Lime
Ingredients: 3 pineapple slices, 2 inches thick, 2 tbsps toasted coconut, 1 lime (cut into wedges)
Method: Heat grill or grill pan. Grill pineapple until it slightly caramelizes. Transfer to plate. Top with coconut and granish with lime wedges.
Cucumber Pineapple Cooler
Place 3 cups cucumber, coarsely chopped, 2 stalks celery, coarsely chopped, 3 cups fresh pineapple juice, 1 tablespoon fresh ginger juice in a blender or a food processor and blend until smooth. Garnish with celery stalks and serve chilled over ice.
Coconut Pineapple Shake
Take ½ glass of coconut milk and ¾ glass of pineapple juice. To this, add ½ cup fresh cream. Add 1 tsp. of sugar or honey to the juice, coconut milk and cream. Blend in an electric blender and mix for 2 minutes. Add finely chopped pineapple pieces and serve in a tall glass.
Warm Shrimp and Pineapple Salad (via)
Ingredients: 1 pkg (16 oz) frozen black-eyed peas (about 3 3/4 c), 1 1/4 c frozen green peas, 1/2 red bell pepper, chopped, 1 Tbsp olive oi, 1 tsp paprika, 1/2 tsp salt, 1 lb large shrimp, peeled and cooked 1 1/3 c chopped pineapple, 2 tsp lime juice, 1/8 tsp hot-pepper sauce, 1/3 c fresh basil leaves, chopped (optional)
Method: Combine black-eyed peas, green peas, bell pepper, oil, paprika, and salt in large pan and cook over medium-high heat 4 minutes. Add shrimp and cook until heated through, 2 minutes. Toss in remaining ingredients. Season to taste with salt and pepper and serve.
